Easy Chocolate Peanut Butter No-Bake Cookies

Summer is just around the bend, which makes this recipe a great one to have on hand when you need a quick, chocolate treat.  After all, when it’s hot outside, who wants to stand anywhere near the oven?  Now, these are labeled no-bake, but it doesn’t mean they aren’t cooked—that’s done on the stove and only takes a few minutes.

 

I Need Something

 

I don’t know about you, but I can take my last bite of dinner and it doesn’t feel like I’m finished until I can satisfy my mouth with something chocolate melting on my tongue.  And sometimes, the only thing better than something chocolate is something chocolate mixed with peanut butter.  What is it about the way these two flavors combine?  My mouth starts watering the moment I think about them.

 

Where’d They Go?

 

Take a bite of cookie.

These are so good having just one isn't an option.

I should probably warn you—these cookies have a way of disappearing fast, especially when you’ve got a few cookie monsters running free around the house.  My advice: Put them under lock and key and then only dole them out for good behavior.  If you play your cards right, you could have the place looking ship shape without lifting a finger.

 

Let’s Get To It

 

Start by checking around the kitchen for the ingredients.  The chances are you already have what we need.

 

Ingredients

 

These go together quick.

You've probably got these ingredients, but check first just in case.

1/4 cup butter

1 cup sugar

1/4 cup water

1 tablespoon unsweetened cocoa powder

1/4 cup peanut butter

1½ cup dry oat meal (for a smoother texture grind this up in a blender or mini-chop first)

 

Mix ‘Em

 

Now we've go to stir.

After bringing it all to a boil, remove from heat and add in the rest.

Mix the butter, sugar, water and cocoa powder in a medium sized sauce pan.  Bring to a boil over medium heat stirring constantly.  Continuing heating, until the mix boils about 30 seconds.

 

That went together quickly.

Drop on wax paper and then let cool. That's it, we're done.

Remove the pan from the heat, stir in the peanut butter and oats.  Mix thoroughly.  Now, place a sheet of wax paper on the counter, and using a spoon drop cookie-sized portions on the paper.  Allow them to cool before eating.

 

All Done

 

That was quick.  I hope you’re enjoying these as much as I am.  Mmm.
