Microwave Oatmeal Chocolate Chip Cookies



A smart phone cookie app.

I need a cookie app that makes the cookies for me. Until then, I’m sticking to this recipe.

It seems smart phones are getting smarter by the day and they have an app for virtually everything. I haven’t heard of one yet for baking fresh, hot-from-the-oven cookies, but this quick and easy microwave recipe might be just the ticket until something better comes along.


I stuck with oatmeal for this recipe. Oats are high in fiber and we need more of that in our diet. And I added a touch of coconut, too. Coconut is another food we should all be eating. Hey, don’t worry, this is a cookie recipe first and foremost so don’t tell the kids you’re sneaking  healthy ingredients into the mix. Just have them try them and see how it goes.

A few quick notes before we start:


Coconut is good for you.

Have you tried browning your coconut in the microwave. Click the picture to see how.

1) I used instant oatmeal, not regular. 2) I used extra light olive oil. I use it for its health benefits and mild flavor, but if you don’t have it any vegetable oil should work. 3) Your microwave might be different from mine so it could take a little more or less time. 4) You might not think these cookies look “done” when you pull them out of the microwave as they won’t be as brown as the ones you cook in a conventional oven. 5) The cookies do seem to cook a little more once they’re out of the oven so error on the side of undercooking them. Believe me, you can burn them if you cook them too long.
